hey, does anyone know where i could learn everything about car engine, like how it works, and how to put it apart and put it back together, what to change to get a better acceleration...etc

Thibs, for more info about car engine and construction, head to MPH or any bookstore and look for automotive books. In engineering section, many books there to fill you in. When you are lack of certain information that you can't get, then here you will find the answer.
Example something particular about certain cars, or maybe some fine tuning, thats the stuff to get from all the forumers.

MPH got a good selection...but you can google also bro...theres a lot of basic information on cars in the net...with diagrams, images , flash videos, quite interesting....you can start with how an engine works...then move your way up to cams,cyclinders...combustion,da da da...
